Ingredients:
(Serve 2)
Sea Salt, Pinch
Green Beans Ends Trimmed, 450g
Unsalted Butter, 2 TBSP + 2 TBSP
Slivered Almonds, 1/3 Cup
Garlic Finely Minced, 3 Cloves
Fresh Lemon Zest, 1/2 Lemon
Black Pepper, Pinch
Equipment:
Sauce Pot
Directions:
Season a pot of water with salt.
Bring it up to a gentle simmer.
Add in the green beans.
Blanch for 2 to 3 mins or until the green beans are brightly green.
Drain and plunge the green beans into a large bowl of iced water.
Set them aside for a couple of minutes.
Drain and transfer onto a serving plate.
In a sauce pot over medium heat, add 2 TBSP of butter.
Once the butter has melted, add in the almonds.
Lightly toast until aromatic.
Pour it over the green beans.
In the same sauce pot over medium heat, add another 2 TBSP of butter.
Once the butter has melted, add in the garlic.
Toast until aromatic.
Pour it over the green beans as well.
Toss to combine well with lemon zest.
Taste and adjust for seasonings with salt and pepper.
Serve immediately.
