The dish dates back to French culinary traditions, where almonds and butter are often paired with vegetables to enhance their natural flavors. It’s a method that celebrates simplicity while delivering a touch of sophistication, making it a timeless addition to any holiday or family meal.

For me, this recipe is all about balance. The green beans, blanched until just tender and vibrant, retain their crunch and natural sweetness. Toasted almonds lend a warm nuttiness, while butter and garlic tie everything together with rich, aromatic depth.


It’s minimal effort for maximum flavor—a refreshing contrast to heavier holiday dishes, yet substantial enough to hold its own.

Ingredients:

(Serve 2)

  • Sea Salt, Pinch

  • Green Beans Ends Trimmed, 450g

  • Unsalted Butter, 2 TBSP + 2 TBSP

  • Slivered Almonds, 1/3 Cup

  • Garlic Finely Minced, 3 Cloves

  • Fresh Lemon Zest, 1/2 Lemon

  • Black Pepper, Pinch

Equipment:

  • Sauce Pot

Directions:

  1. Season a pot of water with salt.

  2. Bring it up to a gentle simmer.

  3. Add in the green beans.

  4. Blanch for 2 to 3 mins or until the green beans are brightly green.

  5. Drain and plunge the green beans into a large bowl of iced water.

  6. Set them aside for a couple of minutes.

  7. Drain and transfer onto a serving plate.

  8. In a sauce pot over medium heat, add 2 TBSP of butter.

  9. Once the butter has melted, add in the almonds.

  10. Lightly toast until aromatic.

  11. Pour it over the green beans.

  12. In the same sauce pot over medium heat, add another 2 TBSP of butter.

  13. Once the butter has melted, add in the garlic.

  14. Toast until aromatic.

  15. Pour it over the green beans as well.

  16. Toss to combine well with lemon zest.

  17. Taste and adjust for seasonings with salt and pepper.

  18. Serve immediately.
