Cookies & Cream Tiramisu


Ever since I ordered Hydrox cookies and cream from Amazon, I am hooked. I can never look at Oreo the same way again. Because Hydrox is the OG; it looks and tastes far superior to Oreo. Please support small businesses like Leaf Brands (manufacturer of Hydrox).



After my recent Halloween Special: Cookie Monster, this idea popped into my mind several times. Eventually, I decided to do it on a whim. As soon as the first mouthful hits my palate, I knew this will leave me in a food coma. Indeed it does. I and my 2 kids were fighting over 2 cups of this awesome tiramisu.



After this success, there are multiple cookies that I wanna tiramisurize. Biscoff is at the top of the list. Any suggestions and ideas are welcome. In the meantime, let's get started with the recipe.


 

Ingredients:

(Serve 2)

  • Cookies & Cream Preferably Hydrox, 10 Less or More

  • Mascarpone

  • Fillings:

  • Egg Yolks, 2

  • Granulated Sugar, 70g

  • Egg Whites, 2

  • Sea Salt, Pinch

  • Tiramisu:

  • Oat Milk Homemade / Whole Milk, 1/2 Cup

  • White Chocolate Liqueur, 2 TBSP (Optional)

  • Cookies & Cream Preferably Hydrox, 2

 

Equipment:

 

Directions:

  1. Separate the cream from the cookies with a spatula into individual bowls.

  2. Weigh the cream.

  3. Add in just enuff mascarpone to make the total weight 225g.

  4. Mix until well combined.

  5. Set aside.

  6. Prepare the fillings.

  7. Prepare a double boiler.

  8. Add the egg yolks to the double boiler.

  9. Whisk until it turns pale yellowish.

  10. *Make sure the simmering water does not touch the bowl, or else the eggs will scramble.*

  11. Add in the sugar and whisk until everything is fully incorporated.

  12. The mixture should thicken and the color should lighten.

  13. In another bowl, using a hand or stand mixer, whisk egg whites and salt until stiff peaks form.

  14. Fold the yolk mixture into the mascarpone mixture, 1/3 portion at a time, until everything is well combined.

  15. Next, fold the egg whites in 1/3 portions until everything is fully incorporated.

  16. Transfer into a piping bag and keep chilled until ready to use.

  17. Prepare the tiramisu.

  18. In a shallow bowl, add milk and white chocolate liqueur.

  19. Mix until well combined.

  20. Dip one cookie into the milk mixture and flip only once.

  21. I'm just using drinking glasses to serve my tiramisu.

  22. Drop the dipped cookie into the glass.

  23. Pipe the mascarpone mixture onto the cookie.

  24. Repeat the steps and stack to the brim.

  25. Chill in the fridge overnight.

  26. The next day, blitz 2 more cookies and cream in a food processor until powder forms.

  27. Dust cookies and cream powder over the top.

  28. Stick 1 cookie into the tiramisu.

  29. Serve immediately.
