My Grilled Pizza: Bacon & Apple Medley

After the success of my pear and blue cheese pizza, I decided to push the boundaries further with the addition of apples, and the result is the delicious Bacon & Apple Medley Pizza. Combining the sweet, caramelized apples with the savory crunch of bacon and aromatic herbs creates a perfect balance of flavors that is both surprising and satisfying.

Experimenting with fruit on pizzas might seem unconventional, but it opens up a whole new world of taste experiences. The natural sweetness of the apples pairs beautifully with the smoky bacon, and the blend of cheddar and Gruyere cheeses adds a creamy richness. The herbs bring a fresh, earthy note that ties everything together, making each bite a delightful adventure.

(Make 2 grilled pizzas)

  • Sesame Oil, For Brushing

  • Bacon, 6 Strips

  • Red Onion Thinly Sliced, 1

  • Sea Salt, Pinch

  • Black Pepper, Pinch

  • Balsamic Vinegar, A Splash

  • Any Red Apples Cored Thinly Sliced, 2 or 3

  • Thyme Finely Chopped, A Small Handful

  • Rosemary Finely Chopped, A Small Handful

  • Maple Syrup, A Drizzle

  • Grilled Pizza Dough Homemade, 2 Dough Balls

  • Cheddar Coarsely Diced, A Handful + More For Grating

  • Gruyere, For Grating

  • Coriander Coarsely Sliced, A Handful



  • Griddle

  • Cast Iron Skillet / Pan

  • Oven



  1. Please visit my "Grilled Pizza Dough" page for the recipe.

  2. Lightly brush a skillet with sesame oil.

  3. Place in the bacon strips and broil in the oven until crispy.

  4. You might have to do this in batches.

  5. Transfer to a plate and set aside to cool down.

  6. In the same skillet over medium heat, add in onion.

  7. Season with salt and pepper.

  8. Saute to combine well.

  9. Deglaze with balsamic vinegar.

  10. Continue cooking until translucent.

  11. Add in apples, thyme and rosemary.

  12. Saute until aromatic and the apples are lightly caramelized.

  13. Lastly, drizzle maple syrup over the top and give it a final stir to combine well.

  14. Remove from heat and set aside until ready to use.

  15. Once the bacon is cool enough to handle, coarsely slice and set it aside until ready to use, reserving the bacon fat.

  16. Once you have rolled out your pizza dough, brush the griddle with that bacon fat with a pastry brush.

  17. *Remember to use a fork and gently poke all over. This is crucial as it will prevent the crust to puff up.*

  18. In a griddle over medium heat, gently place in the dough.

  19. Carefully and gently, use your hands to press down the dough to make sure the whole dough sits fully on the griddle.

  20. Brush the top with some sesame oil.

  21. Grill until lightly charred.

  22. Flip the dough.

  23. Immediately turn the heat down to medium-low.

  24. Add some cheddar and gate gruyere over the pizza.

  25. Top with the apple mixture, spreading out evenly.

  26. Add in some of that bacon.

  27. Grate some more cheddar over the pizza.

  28. Immediately cover the griddle to generate steam in order for the cheese to melt.

  29. As soon as the cheese melts and the bottom is lightly charred, remove the cover.

  30. Remove the pizza from the heat and transfer it onto a serving plate.

  31. Sprinkle some coriander over the pizza.

  32. Repeat the steps for the remaining pizza.

  33. Slice and serve immediately.

Slice of heaven...
