Ice Cream on French Toast

I posted this back on Instagram back in 2018, and until now, I am still wondering if this is appropriate. This happens when I want desserts for brunch. You should see the looks on my daughters' faces when I served these up for their brunch. They said, "we should have this for brunch everyday!" I just shocked my head in disagreement, "not unless you are willing to work out after." I was thinking to myself, maybe it is a good idea to serve desserts for brunch. You seriously don't want to serve desserts to your kids right after dinner; it will keep them hyper active at night! Lol!

 

 

Anyway, you can use any combination of fruits as desired. I do find that the combination of strawberries and kiwi looks more Insta-worthy. Don't you agree? I would recommend a good quality coned ice cream as it is the start of the show. I was using Wall's Cornetto. In closing, I really hope you will give this recipe a try and impress your kids.

 

Ingredients:

(Serve 1)

  • Egg, 1

  • Whole Milk, 1/8 Cup

  • Pure Vanilla Paste, 1/4 TSP

  • All Spice Powder, Pinch

  • Unsalted Butter, 2 TBSP

  • Thick White Sandwich Bread, 3 Slices

  • Coned Ice Cream, 1

  • Strawberries Finely Diced, 3

  • Kiwi Finely Diced, 1

  • Icing Sugar, For Dusting

Equipment:

  • Cast Iron Skillet / Pan

Directions:

  1. In a large bowl, whisk together eggs, milk, vanilla and all spice powder.

  2. Whisk until well combined.

  3. In a skillet over medium-low heat, add butter.

  4. Once butter starts to melt, dredge bread into the egg mixture and place into the skillet.

  5. Cook until lightly browned on both sides.

  6. Repeat the steps for the remaining bread.

  7. Remove from heat and transfer onto a serving plate.

  8. Serve with ice cream, strawberries and kiwi.

  9. Lightly dust icing sugar over the top.

  10. Serve immediately.
