If you ever been to Japan, you will see these beautifully sliced fruits sandwich in any 24hrs convenient store. Actually, they are perfectly sliced. Back in 2018, I tot I gave it a try but sadly, my sandwich wasn't as perfect compared to theirs. But, it is still a healthy and yummilicious sandwich for brunch.
You can use any combination of fruits. Choose the ones which will look beautiful when sliced. Mango, peaches, mandarin oranges, blackberries, raspberries and even steamed ube are very good alternatives. You can prepped this the night before and eat this sandwich on the go next morning. I really hope you will give this recipe a try.

Whipping Cream, 50g
Natural Greek Yogurt, 50g
Demerara Sugar, 1 TBSP Adjust To Preference
Pure Honey, 1 TBSP Adjust To Preference
Thick White Sandwich Bread Crust Removed, 2 Slices
Strawberries Halved, 3
Kiwi Peeled Quartered, 1
In a large bowl, over an ice water bath, add cream, yogurt and sugar.
Using a hand mixer, whisk together until stiff peaks form.
Add in honey.
Give it a final whisk.
Spread a thick layer onto the bread.
Lay fruits as shown in the photos below.
Spread the remaining cream mixture to cover the fruits completely.
Place another bread to finish the sandwich.
Press and wrap tightly with cling film.
Let the sandwich set in the fridge for at least an hr.
Remove from fridge, unwrap and horizontally.
