Arugula Apple Tartine

This is yet another tartine which I made create back on March 2018. I am still using the same cheese spread but instead of chili flakes, I used honey instead. Be sure to use a good quality pure honey. There are a lot of "fake" honey out there; some are even selling at high prices. You can watch some YouTube tutorials on how to differentiate between real and fake honey. Anyway, I tried to make an apple rose, but failed epically. This is what I ended up with.

 

 

Of cos, you don't have to go thru' the trouble in make any apple roses. The salad is already good enuff on it's own. Apple and arugula really compliment each other very well. That honey sorta elevate the flavors up a notch. Plus that cheese on toast, you get sweetness, savory, tartness and peppery. I really hope you will give this recipe a try.

 

Ingredients:
(Serve 2)

  • Cheese Spread:

  • Fresh Mozzarella Freshly Shredded, 2 TBSP

  • Homemade Ricotta, 2 TBSP

  • Pure Honey, 1 TBSP

  • Fresh Lemon Juice, 1/2 Lemon

  • Fresh Lemon Zest, 1/2 Lemon

  • Sea Salt, Pinch

  • Black Pepper, Pinch

  • Salad:

  • Arugula, A Handful

  • Red Apple Cored Thinly Sliced, 1

  • Fresh Lemon Juice, 1/2 Lemon

  • Fresh Lemon Zest, 1/2 Lemon

  • Sea Salt, Pinch

  • Black Pepper, Pinch

  • Tartine:

  • Extra Virgin Olive Oil, 2 TBSP

  • Ciabatta / Baguette / Sourdough, 2 Slices

  • Pure Honey, For Drizzling

Equipment:

  • Cast Iron Skillet / Pan

Directions:

  1. Prepare the cheese spread.

  2. Mash mozzarella and ricotta together with the back of a fork.

  3. Add in honey, lemon juice and zest.

  4. Lightly season with salt and pepper.

  5. Mix until well combined.

  6. Set aside in the fridge until ready to use.

  7. Prepare the salad.

  8. In another bowl, add arugula and apple.

  9. Toss in lemon juice and zest.

  10. Lightly season with salt and pepper.

  11. Give it a final toss to combine well.

  12. Set aside chill in the fridge until ready to use.

  13. Prepare the tartine.

  14. Drizzle olive oil onto both sides of the bread.

  15. Toast bread in a skillet until lightly charred.

  16. Flip and spread the cheese mixture onto the bread.

  17. Turn the heat down to low and cover.

  18. Cook until the cheese is melting and bottom is lightly charred.

  19. Remove from heat and transfer onto a serving plate.

  20. Spoon the salad onto the bread.

  21. Drizzle some more honey over the top.

  22. Serve immediately.
