My Pizza Fritta: The Singapore Black Pepper Crab

I learned a neat trick from the guys selling Navajo Tacos aka Fried Tacos, which is adding milk to the flour instead of water. By doing so, it sorta gives the dough an even browning and adds more fluffiness during final frying.

To be honest, I prefer this pizza more than the Singapore Chili Crab Pizza Fritta. Perhaps, I do not really like spicy food. Who knows? I might fuse some of Singapore's famous dishes into pizza fritta. Well, I guess I had perfected 2 pizza fritta with Singapore dishes. Maybe a Nasi Lemak Pizza Fritta, or a Laksa Pizza Fritta?

The thing which I love about pizza fritta is that the dough will puff up in different directions and shapes during the frying process which gives the pizza a very rustic look. Definitely not that commercial pizza dough from some pizza chains. You should know which chain I am referring to. Lol! Anyway, I can practically finish the whole pizza by myself and maybe even go for a second one. Cos is so damn good. I hope you will give this recipe a try.

Ingredients:
(Make three 8 inch pizza)
Black Pepper Crab:
Curry Leaves, A Handful
Unsalted Butter, 1 TBSP
Shallots Finely Minced, 3
Garlic Finely Minced, 3 Cloves
Black Pepper, 1 1/2 TSP
White Pepper, 1/2 TSP
Fresh Red Chilies Deseeded Finely Sliced, 2 or More If You Are Awesome
Good Quality Crab Meat Fresh or Frozen, 125g
Hoisin Sauce, 1/2 TSP
Vegetarian Oyster Sauce, 1 1/2 TBSP
Light Soy Sauce, 1 1/2 TBSP
Pure Honey, 1 1/2 TBSP
Cheese Sauce:
Unsalted Butter, 1/2 TBSP
Bleached All Purpose Flour, 1/2 TBSP
Chicken Stock, 3/4 Cup
Gruyere Freshly Shredded, 1/4 Cup
Low Moisture Mozzarella Freshly Shredded, 1/8 Cup
Parmigiano Reggiano Freshly Grated, 1/2 TBSP
Sea Salt, Pinch
Pizza:
Deep-Fried Pizza / Pizza Fritta "Montanara" Dough, 3 Dough Balls
Canola / Peanut / Vegetable Oil, For Frying
Curry Leaves, A Handful
Japanese Mayo, For Garnishing
Fresh Coriander Coarsely Chopped, A Handful
Pure Honey, For Drizzling
Equipment:
Dutch Oven / Deep Fryer
Cast Iron Skillet / Pan
Sauce Pot
Tongs
Wire Cooling Rack / Plate Lined with Kitchen Paper

Prepare the black pepper crab.
Stack the curry leaves and roll it into a cigar log shape.
Finely slice the leaves and set aside.
In a skillet over medium heat, add in butter.
As soon as the butter starts to melt, add in shallots.
Saute until translucent.
Add in garlic and saute until aromatic.
Add in black pepper, white pepper, sliced curry leaves, crab meat and chili.
Saute until the curry leaves have wilted and the mixture is well combined.
Add in hoisin sauce, oyster sauce, light soy sauce and honey.
Stir to combine well.
Remove from heat and set aside.
Prepare the cheese sauce.
In a sauce pot over medium heat, add in butter and flour.
Whisk to combine.
Continue whisking until the mixture is pale yellowish.
Gradually add in the chicken stock while still whisking vigorously to prevent any lumps. Whisk, whisk, whisk.
Add the black pepper crab mixture gradually while still whisking.
Whisk to combine well.
Gradually add the 3 kinds of cheese while still whisking.
Continue whisking until all the cheeses are melted.
Remove from heat and set aside.
Deep fry and assemble the pizza.
Prepare a dutch oven or a deep fryer with at least 3 inches of oil.
*Drop a small pinch of dough into the oil. If it starts to sizzle, the temperature of the oil is ready.*
After shaping the pizza dough, gently and carefully, drop the pizza dough into the oil away from you.
Deep fry until the bottom is golden brown.
Using tongs to carefully flip the pizza dough.
Deep fry until golden brown on the other side as well.
Using tongs to carefully transfer the pizza dough onto a wire cooling rack or a plate lined with kitchen paper to drain off excess oil.
While the oil is still hot, add in a handful of curry leaves.
As soon as the leaves stop sizzling remove from heat and set aside to drain off excess oil.
*Careful as adding the curry leaves into oil will splatter.*
Immediately, spoon and spread the black pepper crab cheese mixture over the pizza dough.
Top the pizza off with small dollops of mayo.
*You can use a piping bag with a star tip if you wanna get fancy, or you can simply use a squeeze bottle.*
Next, using scissors, cut the coriander over the top.
Top with some of the fried curry leaves.
Finally, drizzle honey over the pizza in a spiral motion.
Repeat the steps for the remaining pizza.
Slice and serve immediately.
