Yet another request from two of my Instagramers. To be honest, I am not really a fan of caramel; probably I don't really like the taste of caramelized sugar. It is overpoweringly sweet. But ever since I started making my own, I get to control the ratio of ingredients used. The added salt and vanilla did in fact tone down the sweetness just a bit and helps to elevate the flavor.
A salted caramel milkshake can be a bit bland. I was brainstorming loads of ideas about what to go along with it. That's when another 2 of my Instagramers gave me some inspirations. They said why not dip the caramel sauce with apples. It was at that exact lightbulb moment that this milkshake is born. I cooked down a gala red apple as you would with an apple sauce, mashed it into fine pieces, add in some dark muscovado sugar and a splash of apple brandy, then garnish over the milkshake. What's apple sauce without some crumbles? I also made some crumbles to go along with it. That indeed compliment the milkshake very well. Without much delay, let's get started with the recipe.
(Make 1 milkshake)
Red Gala Apple Peeled Cored Coarsely Sliced, 1
Apple Cider Vinegar, 20g
Dark Muscovado Sugar, 1/2 TSP
Apple Brandy, 1 TBSP
Bleached All Purpose Flour, 1.5 TBSP
Rolled Oats, 1 TBSP
Dark Muscovado Sugar, 1/2 TBSP
Granulated Sugar, 1/2 TBSP
Unsalted Butter Softened, 1 TBSP
Whole Milk, 1/3 Cup
High Quality Vanilla Bean Ice-Cream, 160g
Homemade Vanilla Salted Caramel Sauce, 2 Heaped TBSP + More For Drizzling
Sea Salt, Pinch
Whipped Cream, For Topping

Prepare apple sauce.
In a sauce pot over medium-low heat, add apple and vinegar.
Stir constantly to combine well and to prevent burning.
Cook until the apple becomes marshy.
Add in sugar and brandy. Stir to combine well and until the sugar has dissolved.
*Careful as it may flambé.*
Using a potato masher, mash the apples into fine pieces.
Remove from heat and set aside.
Prepare the crumbles.
Preheat oven to 180 degree celsius or 360 fahrenheit.
In a small bowl, add flour, oats, sugar and butter.
Mix to combine well. Mix, mix, mix.
Mix until it becomes wet sand consistency, almost like small balls of wet flour.
Transfer onto a baking tray lined with parchment paper.
Wack into the oven and bake for about 5 to 8 mins or until crisp brown.
Remove from the oven and set aside.
Chill serving glass in the fridge until ready to serve.
In a blender, add milk, ice-cream, caramel sauce and salt.
Pulse the mixture a few times to break up the ice-cream.
Blitz it up to combine the mixture.
*As soon as you see the mixture is combined well, stop blitzing. Over-blitzing will cause the ice-cream to melt super fast and causing it to split.*
Pour milkshake into serving glass.
Garnish the milkshake with whipped cream and the apple sauce.
Drizzle some more of that caramel sauce over the top.
Lastly, sprinkle the crumbles over the top.
