I guess I had given in to my daughter's request in making the viral TikTok wrap-sandwich. You can call this a coincidence. I was scrolling thru' TikTok and finding out more about the recipe, @annainasia's recipe popped up. What makes hers unique is the addition of eggs. And if you have seen my previous Pea Flatbread recipe, you will know how it all began.
I have no idea what sauce is she using, so I am guessing tahini. Besides tahini goes really well with avocado and tomatoes. You can give it a shot if you have doubts. I can say that @annainasia is a genius for adding a touch of Cajun Seasoning. That zingy spiciness really amped up the flavors.
After some requests from my InstaFam in turning this into pizza, I figured why not? I can have this as a pizza or wrap this up like a sandwich. The end result is still the same: yummiliciousness in my mouth. The both of us devoured this within mins! Daughter's request was fulfilled, finally!

Cherry Tomatoes, 12
Sea Salt, Pinch
Black Pepper, Pinch
High Quality Olive Oil, A Drizzle
Fresh Lemon Juice, 1/2 Lemon
Tahini, 2 TBSP
Chili Flakes, Pinch
Cajun Seasoning Homemade, Pinch
Unsalted Butter, 2 TBSP
Pea Flatbread Homemade, 1
Feta, A Few Crumbles
Dried Parsley, Pinch
Non Stick Iron Skillet / Pan

Preheat the oven to 230 degree celsius or 450 fahrenheit.
Season cherry tomatoes with salt and pepper.
Drizzle some olive over the top.
Toss to coat the tomatoes well.
Wack into the oven and bake for 10 to 12 mins or until the tomatoes are blistered and lightly charred.
Remove from the oven and set aside until ready to use.
While the tomatoes are baking, mash the avocado with a fork.
Drizzle some lemon juice over the top and add in the tahini.
Season with salt and pepper.
Mix until well combined and set aside until ready to use.
Whisk 3 eggs with a fork.
Season with salt and pepper. Add in the chili flakes and cajun seasoning.
Whisk until well combined.
Melt butter in a skillet over low heat, coating the whole skillet.
Once the butter has melted, add in the eggs.
Add in the flatbread once the sides start to cook.
Loosen the sides and flip confidentially.
Turn off the heat.
Spread the avocado mixture onto the omelette.
Sprinkle the cherry tomatoes over the top, followed by the feta.
Finally, drizzle all the leftover oil over the top (from the baked tomatoes).
Turn the heat up to low.
Cover and cook for about 1 min or until the cheese is soft.
Remove from heat and transfer onto a serving plate.
Garnish with some dried parsley.
You can slice and serve it like a pizza.
Or you can simply fold it up like a sandwich.
Pizza... (In case you're wondering, the calyx is totally edible. It also gives a tomatoey taste.)
