My Grilled Pizza: The Sizzling Vegan Sisig

I had a huge disappointment when I visited Max's for their sizzling chicken sisig. The chicken is bland and the plate wasn't even sizzling; it is definitely not how I remembered it used to be. I was sitting with a penny to my thoughts. Pondering if I were to make this dish, how will I make differently. This is how this pizza was created.

I used a combination of different mushrooms and tofu. The tricky part is getting the tofu right. Tofu itself is super soft and contains lots of liquid, almost like a sponge. I listed down the steps below to get a crispy and flavorful tofu. It is very time consuming, but it is definitely worth it. I was using a combination of my favorite mushrooms. You can use any combination of mushrooms as desired.

After cooking the sisig, nostagia kicked in as I remembered the very 1st time I had tasted it. It is salty, savory, creamy, tangy, zesty, spicy and with that few biteful of crispiness. This is how it is supposed to be. The core ingredients are soy sauce and coconut vinegar. I used tamari to make this vegan. I mean, the sisig can be eaten on it's own, but wouldn't it be exciting to put it on a pizza? Anyway, I hope you will enjoy this pizza as much as I do.


(Make 3 grilled pizza)

  • Tofu:

  • Firm Tofu, 300g

  • Tamari, A Splash

  • Sea Salt, Pinch

  • Cornstarch, Pinch

  • Sisig:

  • Garlic Powder, 1/2 TSP

  • Tamari. 1/2 Cup

  • Filipino Coconut Vinegar, 1/4 Cup

  • Granulated Sugar, 3/4 TBSP

  • Black Pepper, Pinch

  • Shiitake Mushrooms Finely Diced, 200g

  • Oyster Mushrooms Finely Diced, 150g

  • Good Quality Vegan Butter, 1 TBSP

  • Red Onion Finely Sliced, 1

  • Ginger Finely Minced, 1/2 Inch

  • Garlic Finely Minced, 2 Cloves

  • Vegan Mayo, 1/4 Cup Adjust To Preference

  • Red & Green Chilies Finely Sliced Deseeded, 1 Each

  • Fresh Lime Juice, 1/2

  • Fresh Lime Zest, 1/2

  • Liquid Smoke, A Dash

  • Sea Salt, Pinch

  • Pizza:

  • Grilled Pizza Dough, 3 Dough Balls

  • Good Quality Vegan Butter, For Brushing + More For Sizzling

  • Green Onion Finely Sliced, A Handful

  • Red & Green Chilies Finely Sliced Deseeded, 1 Each


  • Cast Iron Skillet / Pan

  • Oven

  • Griddle / Grill Oven

  4. Prepare tofu.

  5. Slice tofu into 4 slices.

  6. If you have a tofu press, use it to press the tofu to release the liquid.

  7. If not, wrap the tofu slices with a lint free kitchen towel.

  8. Place a skillet on top of the tofu.

  9. Put some weight onto the skillet; I used can food.

  10. *Please do not put too much weight as you will squash the tofu.*

  11. Set aside for at least 1hr.

  12. You will notice how much liquid has been drawn out from the tofu.

  13. The tofu has also becomes firmer.

  14. Slice the tofu into tater tots sizes.

  15. Transfer into a baking tray lined with parchment paper.

  16. Lay the tofu tots apart without overlapping as you will have a hard time separating after freezing.

  17. Freeze the tofu in the freezer until completely frozen.

  18. Preheat oven to 180 degrees celsius or 355 fahrenheit.

  19. I do not believe in microwave, so I steamed my tofu for about 5 mins.

  20. More liquid is extracted from the tofu.

  21. Pat the tofu dry with a lint free kitchen towel.

  22. Transfer into a small bowl.

  23. Add a dash of tamari and a pinch of salt.

  24. Lightly stir to combine well and the tofu is well coated.

  25. Add in cornstarch.

  26. Lightly mix to combine well and the cornstarch can't be seen.

  27. Transfer into a baking tray lined with parchment paper.

  28. Wack into the oven and bake for 30 mins or until the tofu is crispy.

  29. Remove from oven and set aside.

  30. Prepare the sisig

  31. In a bowl, add garlic powder, tamari, vinegar, sugar and pepper.

  32. Stir until well combined or until the sugar has dissolved.

  33. Add in the mushrooms.

  34. Mix until well combined.

  35. Cover with cling film and let chilled in the fridge for at least 4 hours.

  36. You will notice that the mushrooms have shrunk.

  37. In a skillet over medium heat, add in vegan butter.

  38. Once butter starts to melt, add in onion.

  39. Season with salt, pepper and sugar.

  40. Saute until lightly caramelized.

  41. Add in ginger and garlic.

  42. Saute until aromatic.

  43. Add in the marinaded mushrooms and all the marinade.

  44. Saute to combine well.

  45. Continue cooking until the liquid has almost evaporated and until the mushrooms are lightly caramelized.

  46. Add in vegan mayo.

  47. Adjust the quantity as desired. If you prefer your sisig to be more creamy, add in more.

  48. Add in the prepared tofu tots.

  49. Stir to combine well.

  50. Add in chilies, liquid smoke, lime juice and zest.

  51. Stir to combine well.

  52. Taste and adjust for seasoning.

  53. Give it a final stir.

  54. Remove from heat and set aside.

  55. Assemble and grill the pizza.

  56. Once you have rolled out your pizza dough, brush the dough with vegan butter using a pastry brush.

  57. *Remember to use a fork and gently poke all over. This is crucial as it will prevent the crust to puff up.*

  58. In a griddle over medium heat, gently place in the dough buttered side down.

  59. Carefully and gently, using your hands to press down the dough to make sure the whole dough sits fully on the griddle.

  60. Grill until almost charred.

  61. Remove from the girddle.

  62. Flip the dough onto a working surface.

  63. Top the pizza with the sisig.

  64. Add 1 TBSP of vegan butter into the hot griddle.

  65. It should start to sizzle and becomes smokey.

  66. Swirl the griddle.

  67. Immediately, place the pizza back into the sizzling griddle.

  68. Cover the griddle with a lid and grill for about 5 mins or until the bottom is lightly charred.

  69. Remove from heat.

  70. Garnish with green onion and chilies.

  71. Slice and serve immediately.

  72. Repeat the steps for the remaining pizzas.
