After some brunch, let's indulge in some warm and cozy latte. To be honest, at 1st sip, this coffee indeed tastes weird, but after a few more sips, it gets more and more interesting. There is not a need to spend $6 over at the green mermaid. You can simply make this at home with the ingredients you probably have on hands.
To make pumpkin puree, you can either roast a pumpkin in an oven until it almost falls apart or you can use those canned ones. I personally find that by roasting the pumpkin in the oven adds a subtle touch of smokiness to the latte. If you are wondering what makes this latte Greek, is the frothed Nescafé coffee. Pumpkin Puree, 2 Heaped TBSP
Freshly Grated Nutmeg, Pinch
Ground Cloves, Pinch
Cinnamon Powder, 1/2 TSP
Ginger Powder, 1/4 TSP
Pure Vanilla Paste, 1/2 TSP
Pure Honey, 1 TBSP Adjust To Preference
Whole Milk, 1 Cup
Nescafé Instant Coffee, 1 TBSP
Cinnamon Stick, For Serving
In a small bowl, add pumpkin puree, nutmeg, cloves, cinnamon, ginger, vanilla and honey.
Mix to combine well.
Pass the mixture thru a fine sieve and into serving cup.
Use a milk frother if you have one.
If you don’t have a milk frother, you can use a blender or a heat proof mason jar with an air tight lid.
In a sauce pot over medium-low heat, pour in milk.
If you have a milk frother, you can at this point froth your milk until foamy.
*Once you see bubbles start to form along the edge, it almost at boiling stage.*
Remove from heat immediately.
*Do not allow milk to boil.*
If using a blender, carefully pour the warm milk into the blender and blitz until foamy.
If using a mason jar, pour the warm milk into the jar and seal with lid.
Shake the jar vigorously until foamy.
Scoop the milk foam into the serving cup
Pour in milk until 2/3 full.
In a cup, add in instant coffee.
Add about 1/8 cup of hot water.
Using a milk frother, froth coffee until super frothy and foamy. It should take a couple of mins.
Using a spoon to block the foam from pouring into the milk, pour in the frothed coffee until about 7/8 full.
Scoop the coffee foam onto the coffee until the cup is full.
Serve immediately with cinnamon stick.
