This sandwich is inspired by SeriousEats. I saw this on their YouTube video and I was completely mindblown. This is like a level-up of grilled cheese sandwich. I mean, come on, you get the ooey gooey cheese and on top of that, the yolks just explode as soon as you slice into the sandwich, leaving a beautiful mess. That's pure foodgasm.
This is a fairly easy sandwich to make. The tricky part is not to overcook the eggs, else you will not get that eggsplosion effect. It is just like cooking a fried egg, but with bread and cheese. Another key notes are American cheese and unsalted butter make a great grilled cheese sandwich. Yes, 2 important components. I do not know why, but American cheese tends to have that ooey gooey effect as compared to other cheeses. You can get away with cheddar tho.
As for the butter, always use unsalted butter, because it allows you to control the saltiness of the sandwich. Always wait for the butter to brown before placing the sandwich into the skillet. The brown unsalted butter adds more depth to the flavors as well as giving the sandwich an even grilled. The last is to always season your grilled sandwich. You can get fancy with different types of seasoning, like pink pepper or truffle salt, you can even add some greens, like green onion or parsley. I just season mine with cayenne and matcha salt. White Sandwich Bread, 2 Slices
Unsalted Butter, For Grilling
American Cheese / Cheddar, 2 Slices
Matcha Salt, For Seasoning
Cayenne, For Seasoning
Cast Iron Skillet / Pan

Using a cookie cutter or a mason jar, cut out circles from the bread.
In a skillet over medium-low heat, add 1 TBSP of butter.
As soon as the butter starts to melt, keep an eye on it.
Continue to cook the butter until the butter starts to brown.
Add in the slices of bread.
Cook the bread for about 1 to 2 mins or until the bottom starts to brown.
Crack an egg into a mug.
Pour the egg into the hole of the bread.
Repeat for the remaining egg.
*By cracking the eggs into a mug saves you hustle of scooping out any broken egg shell in the skillet or if the eggs are bad, you can just discard the eggs rather than starting all over again.*
Continue cooking the bread for a further 1 min.
Carefully remove the bread from the skillet with a spatula.
Brown another 1 TBSP of butter in the skillet.
Flip the bread into the skillet to cook the other side.
Cook for 30 sec and add the slices of cheese on each slices of bread.
Sandwich the bread.
Add another TBSP of butter into the skillet and cook for a further 30 sec.
Flip the sandwich and cook for another 15 to 30 sec.
Remove from skillet and transfer onto serving plate.
Season the sandwich with matcha salt and cayenne or seasoning of your choice.
